Este guiso mixto, popular en Chihuahua y el norte de M\u00e9xico, se cocina en un \u201cdisco\u201d de arado adaptado como comal, lo que le da su nombre y ese sabor campestre que tanto gusta. La base suele mezclar carnes de res y cerdo con tocino y chorizo; se integran cebolla, jitomate y chiles, y todo se cocina a fuego medio hasta lograr jugos concentrados y bien sazonados. El disco (una pieza met\u00e1lica c\u00f3ncava) concentra el calor en el centro y deja los bordes m\u00e1s templados. Eso permite sellar las carnes primero y \u201csubirlas\u201d a las orillas para que suelten sabor sin sobrecocerse, mientras las verduras se sofr\u00eden en el centro. Al final se vuelve a mezclar todo para que los jugos se integren.
